When life hands you Peaches.....

Wait don't I mean lemons? No. Peaches!! With all there sweet deliciousness you can make peach cobbler, peach tea, peach sangria ( which i cant wait to have very soon!) the possibilities are endless. Well life has just handed us a big ol basket of beautiful peaches. So with a lot of prayer and planning (and nail biting as we waited!) we have decided to pack up that basket along with everything else we own and make the move to the Peach state of Georgia!! Sure we are going to miss sunny California. We have made so many beautiful memories here like getting married and enjoying newlywed life to having our beautiful little girl and soon to be our little boy. (Not to mention all the friends and family we love dearly and will miss tremendously. )
But this is something we have thought long and hard about and we are so excited to be able to provide our children and ourselves with a different pace of life. A simpler, less stressful, greener view way of life =) And we think Georgia will be a great start to that. Added bonus  my sister and her fam who I miss more and more everyday are there waiting for us with open arms =) I cant wait to share all our new adventures and so happy for what the future holds, life is... well Just Peachy =)

Chocolate craving...

These days I have been loving me some chocolate.. i mean seriously! (I am sipping on my midnight snack Oreo cookie shake as i write this)  A little interesting when you have a little one around who loves to jump on your lap and share with you.. I believe all things in moderation. while I don't encourage "junk food" for kids I also try not to deprive my little one (or myself for that matter) of sweets here and there. When I bake I like to add some kind of nutritional benefit like white whole wheat flour, flax seed, wheat germ, veggies, fresh fruits, and more. That way I don't feel so bad when me and my little one have chocolate for breakfast and we do.. often =) From Chocolate pancakes, chocolate zucchini bread, and our favorite these days "chocy muffins" as my daughter calls them and I'm sharing the recipe with you today! I hope you enjoy them as much as we do! The best part is you can bake em and freeze them! n then reheat whenever the chocolate urge hits you! =)
our ingredients(pretend u see canola oil i forgot to include oops)


have your little one mash the bananas =)
and lick the masher of course =)

once you have it all mixed 2gether add the beautiful chocolate
fill up mini muffin tins
watch the magic happen
and wala!! chocy muffins!!



CHOCY MUFFINS (makes about 20 mini muffins)

1 1/4 cup white whole wheat flour
1/4 cup wheatgerm or ground flax seed
1/2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1/4 cup honey or agave nectar
1 large egg @ room temperature
2/3 cup milk @ room temperature
3 tbsp canola oil
2 ripe bananas mashed
3/4 cups of chocolate chips of your choice

*preheat oven to 400
mix dry ingredients in a small bowl
mix the honey,egg,milk, oil, and bananas in another bowl
then slowly add dry ingredients to the wet and stir in the chocolate
pour batter into mini cups n bake for about 15min or until toothpick comes out clean
cool and enjoy!

A Little Time To.....


Life sometimes has a funny way to remind you never to take things for granted. Life can sometimes get so hectic and so stressful that we forget to take time to reflect on what matters most. For me the last few days have been just that,  so it was nice to be able to take a little time to reflect on the things that are important, the things that need work, and of course the things that make me happy. I realized that in all things you get out what you put in, and no matter how hard, you work at what you Love and you always take a little time to enjoy the little moments with the ones you enjoy the most.

Happy Gardening

     I cant tell peeps enough how rewarding gardening is!no matter how big or small, gardens are the best thing you can do! For me its all about edible gardens.mostly because I love to eat! There is nothing better than eating something you grew yourself! The joys of watching it grow n then ready to pick are just incredible! Its economical, therapeutic, and a great way to get kids involved! My little one loves it! shes a great little helper and then we have so much fun getting in the kitchen together and cooking with all our fresh picked goodies! I have a small space but we got creative and filled it with zucchini,peppers, tomatoes,strawberries, and herbs! and I'm pretty proud to share it with you. I hope you enjoy, I hope I have inspired you to get out there n start growing! Happy gardening =)

A Wacky little Wednesday

Yes today is Thursday but I have got to share this wacky little Wednesday ...It started off great with breakfast (chocolate banana muffins which i plan to post in the future and bacon n eggs) and this beautiful smiling face ... which then turned to eggs all over the floor of course =) My little helper was ready to clean but not without her stylish shades =) shes quite the fashionista..... Then there was our daily nature walk .. in her shades of course =) lunchtime quickly approached... banana quinoa waffle (recipe from the latest parents mag) sammie for the little lady and fruit for me...(odd craving)..

 Now fast foward a few hours of nick jr, chasing after a hyper liittle toddler and a little to much time "researching" the fun ways i can customize my blog...And then it hit like a ton of bricks! insane lower back pains ( maybe a sign our lil one is coming sooner than we planned ) that left me layed in bed and not so happy .. thankfully i have a great little neighbor who not only happened to stop by and offer to take the little one to play with her daughters she also brought tostadas!!!
 Which was a nice addition to my chicken that i had in the crock pot ( btw whole chicken in the crockpot is the greatest little thing ever!) So the night ended with a family fed n a very thoughtful much needed visit from a great friend ( she knows who she is and i hope she smiles) who said everything i needed to hear. So thankyou to great neighbors, great friends, and great food! Just the pick me up i needed to get to the next day!

WELCOME!!

Okay so this is officially my first post!! so excited! My plan is to blog about things that make me happy through food fashion and family .. and maybe some random in between! That's me n my hubby Patrick on our 5year wedding anniversary! He came up with the name for the blog! He's pretty awesome, he makes me happy...
This is my little sunshine Jyselle! She is almost two! She keeps me very busy but makes me oh so happy! She probably inspired this blog. Since becoming a mommy I have learned and am learning so much and want to document every second of it! But you can only instagram so much! So why not start a blog! You will definitely be seeing more of her and our daily adventures...

Finally this is our latest set of  happy little hands ..Aaron Patrick coming soon in June! Hes not even here and my heart is already full of happiness! More of him to come! Okay first post complete! Thank you for sharing in this new happy little hobby of mine! Hope you smile and come back again =)
