Date Night

This Sunday the hubby and I were able to get away for a bit n have our first date night. Just the two of us! really! no kids, no pregnant belly. I must admit it was pretty nice. Okay so it was more like date day, we left at 330 n were back at 630, but to us that's huge! I pumped milk for the littlest one and my sister bravely babysat them both! (We love her!) Nothing fancy smancy we walked through the  mall, had a cocktail =), and ate at the best Thai diner ever! Sometimes I am so busy looking after these two little ones I forget to take time to enjoy moments with the man who made this little life of mine a reality. So as you read this Hubba Hubby ; ) I hope you smile and know that I love you with all my heart and even when I am super stressed and talking crazy I am happier than I ever imagined I could be and I wouldn't trade this life with you for anything.

Sake anyone ?

sweet little muffin

One of my favorite things to keep in my freezer is muffins, when its really hot out and you dont want to turn on the oven these are great to pull out and warm in the toaster oven! You can still have a freshly baked muffin without having to bake! Just bake em when its cooler n label n freeze for up to 3months! They're the perfect quick breakfast, snack, or even dessert. I also love knowing that I made them so I know exactly whats in them and what I'm feeding my family. I got this recipe and the genius idea of freezing from my favorite family friendly food blog weelicous. These cute little muffins are sweet and deliciously nutritious. I love baking these with Jyselle too but this time she was too busy getting into her Aunties lotion to help me but of course she made it to the kitchen just in time to get her little hands on one =) You can get the original recipe here the only change I made was White Whole wheat flour. Ive also linked to the weekend potluck over at lifeasalofthouse. Hope you make these with or without your little ones and enjoy !

Sweet Potato Muffins
1 cup white whole wheat flour
1 cup rolled oats
1/3 cup brown sugar
1tsp baking powder
1/2 tsp baking soda
1/2 tsp salt

1 cup sweet potato puree (bake a sweet potato or two @400 for 1hour cool n slice open n mash flesh )
1/2 cup milk
1/4 cup canola oil
1tsp vanilla
* preheat oven to 350
mix dry ingredients in a bowl n the wet in another then add dry to wet and drop about 1tablespoon into greased mini muffin tins bake for 15min cool and enjoy =)

Pictures, Pins and a little bit of sugar...

Its nap time. Both kiddos are sleeping. Its 2pm and I'm sitting in the loft listening to the rain, thunder and the clicks of my sisters laptop. She types really fast and is actually working. I am too right? Well if blogging and pinning was my actual job I'd be rich =) Anyway things are calming down a bit and our stuff is finally here! Note to self: don't ever pack a loose container of powdered sugar when moving 3000 miles away otherwise you will be cleaning said powdered sugar off of most of your belongings like me =) Despite the sugary situation we had a great little weekend ...now off to pin before they wake up =)

Out n About

So today was my first day out n about with the kiddos! In Georgia! By myself!! =) It was great! A little nerve racking at first driving the country roads with a crying newborn and a curious toddler, but once we drove a bit they both settled down and it was very enjoyable and thankfully we beat the rain (yes the rain! its been on n off pouring drizzling n then sunny again!) Anyway I am really digging this town. The library is awesome and next week we have our first story time so stay tuned for that post to come. The park is beautiful ( and near a famous ice cream parlor) and the moms there were so friendly! I met a few and they told me about other kid friendly spots that I'm looking forward to trying. Also looking forward to hitting the thrift stores n antique shops soon with my sis so look for more fashion and home decorating posts to come! Jyselle was such a good helper today with her brother =) I'm learning more and more each day to appreciate the simple things and am doing my best to capture and enjoy each moment! Hope the pics bring a smile to your weekend! Happy Friday Y'all (lol in my "southern" voice )

Apartment hunting =) pretty sure found the perfect one  (till my country farm dream comes true) thats soon to come!

Her Library pick.. guess she dreams of a farm too ; )

Winner Winner! An Easy chicken dinner! (Thank you Nana)

When Life is crazy this is a great go to recipe. Which if you follow this blog at all you will know that is exactly what my life is these days. A new baby, a new state, staying in a new home with my sis n her family, and a newly two year old who poor little thing is trying to process it all. Between getting up in the middle of the night to nurse a baby or console a stressed little toddler this recipe is right up my alley. When I stayed with my mom after having the baby she made this for me. I thought it was the most delicious chicken ever! She said "oh its so easy" and she is right! Its one of those no fuss throw in the oven kind of chickens. You can adapt it any way you like. You can put it all together the night before or in the morning and let it sit in the fridge till you're ready to bake it. I recently re made it this Sunday for our first Sunday dinner in Georgia and it was a huge hit! No leftovers is a huge hit in my book =) P.S this recipe is linked at the awesome food blog lifeasalofthouse.com  for the weekend potluck! enjoy =)

Yup 5 ingredients ...

pretty purple chicken goodness
Not the best pic but I promise delicious!
Dinner is served! (p.s best mashed potatoes via my sister)

Nana's Easy Chicken Dinner
 *family pack of chicken thighs
*chopped garlic
*sliced bell peppers any color ( I used purple ones I scored at the farmers market!)
*sliced red onion ( as much or as little as you like)
*your favorite Italian dressing

Season the chicken with salt and pepper
Top chicken with garlic, peppers, onion, and dressing ( also put a lil peppers n onions under chicken)
marinate in fridge overnight or a few hours
bake at 375 till skin is crispy n golden brown delicious ( I baked in a dish but my mom says better to foil line a roasting pan so veggies can caramelize and she is right and I will do next time =)

And so it begins...

Life. Family of four. Two kids. This is it! We are all here in Georgia getting settled and situated. I will admit its hard work but I love being a mom of two! I couldn't picture my life any other way! Now would I recommend moving into your parents at 9months pregnant, loading up all your stuff sending it cross country, having a baby, then sending your husband a week early to drive 3000 miles, leaving  you with a newborn and a two year old for a week to then get on an airplane with same kids while just recovering from a c-section!!?? Umm No. But it is what it is and that's what we did and now we are here and I couldn't be happier! Here are some things I have learned so far:
      1. Get a moby wrap! Wear your baby! Its the best and easiest way to get things done and keep your sanity..
      2. Read the fine print of a movers contract and make sure you understand the difference between first available date and the actual delivery date ( i didn't and our stuff still isn't here! thankfully my sis n brother in law have been extra hospitable n we have been very comfy)
      3. Never and I repeat NEVER go out at night in Georgia without bug spray!! ( a very hard n itchy lesson I learned!)
      4. Go to Cracker Barrel and go often =)
      5. Get fresh Georgia peaches and make peach cobbler! ( we did! will be posting that soon!)

So hope that helps at least one person! Whoever is reading this thank you for joining me in the journey I call life =) My posts may not be as regular as I would like due to the craziness of trying to navigate two kids in a new place but I will do my best to document all our happy little moments and share them here! Thank you again for stopping by! Happy Monday! =)
